Grease traps, sometimes called interceptors, are a valuable tool for restaurants, bakeries, and coffee shops. They reduce plumbing problems and upkeep costs, and may be required by the local food service authorities. They are fairly simple devices, but choosing the best one requires information about what they do and how to maintain them. Ideally, you will choose one that is adequate enough for your needs, fits well in the space available, and will last without more than routine maintenance.

Product FAQ

1. What Is a Grease Trap?

It is a passive interceptor that prevents grease waste from leaving with the wastewater. It is composed of a box with an inflow pipe initiation from the sink that comes into the top of the box and an outflow pipe at the bottom of the box leading to the drainpipe. Some have filters, baskets, or baffles in them.

2. How Does It Work?

It works by allowing space for the water to separate from the oil before the wastewater is washed down the drain. It works on the principle that fats and oils will rise to the top and separate from water, and so the drain pipe is positioned at the bottom. This allows the cleaner water to leave without taking all the fat with it.

3. How Often Should I Empty the Grease Trap?

Check with local authorities for legal requirements as they may differ. Some require emptying on a schedule such as once per month, others require emptying at a percentage such as when the tank is 25% full. For good maintenance practice, check the trap weekly.

4. What Happens if I Don’t Empty Often Enough?

If a grease trap becomes overfull, grease will bypass the unit and cause the same issues that would occur if there were no trap installed. The result is plumbing blockages for the restaurant owner or city, odor, and possibly fines or other enforcement actions.

5. What Size Grease Trap Should I Choose?

The bigger the better, but keep in mind how much space you have. Most small-scale traps such as the ones featured here are mounted under the sink which preserves valuable kitchen space. Try to aim for as large a trap as your space and budget will allow. Larger traps require less frequent cleaning, clog less, are more efficient, and provide more time for the water and grease to separate.

Our review left us with a similar impression as most buyers. The John Boos GT-30 Carbon Steel Grease Interceptor is the best one available for an under the sink grease traps. It is not the least expensive option, but it is the most reliable brand with a proven track record. It will work for most situations in which an under the sink interceptor is appropriate.
